A True Garden Salad

Today we made a salad. Not just any salad. Not just any garden salad for that matter. A salad from our garden veg including zucchini, tomato and our own home grown goats cheese! Only kidding, you can’t grow goats in summer here. What a triumph it was! We thought we ought to share it, since it was such a bizarre combination that worked so damn well!

Zucchini Salad

Zucchini, Tomato and Nasturtium Salad

Needs

2 medium sized zucchini (or courgettes if you’re British or fancy yourself a bit much), sliced diagonally

4 tomatoes (any kind but our Amish Paste heirloom toms did a great job)

A handful of Nasturtium flowers (peppery & lovely in colour, but rocket will also do)

2 Tbsp Pistachio Nuts

3 Tbsp Pine Nuts

3 Tbsp goats cheese, crumbled

For the Dressing

2 Tbsp Balsamic Vinegar

3 Tbsp White Wine Vinegar

4 Tbsp Coconut Milk (sounds weird right? Just trust us!)

Generous Pinch of Cracked Black Pepper

1 Tbsp juice from Crushed Garlic

1 tsp salt

1 tsp caster sugar

A beer to have whilst cooking up a storm on the BBQ

Deeds

Grill Zucchini on BBQ until slightly tender but still a bit crisp

Prepare Dressing ingredients and mix in a small bowl

Arrange everything on a plate, pour dressing on

Eat like you’re Janet Jackson lamenting a superbowl peepshow.
